Track 1 – Allergens and Allergen Management

This hands-on workshop will explore the significant impacts of allergens on the food processing and retail sectors. It will provide a fundamental overview of allergen management plans and mitigation (control) practices. Food processing and retail facilities are responsible for ensuring that food safety procedures are implemented in their facility. Undeclared allergens are a leading cause of food recalls due to mislabeling and cross-contamination.

Allergens are a serious concern for the food processing and retail sectors. To optimize your investment in this Allergen Management workshop, we ask that you bring either a hard or electronic copy of your Allergen Management and Recall Plans. Be prepared to identify your products, list of approved suppliers, co-packers, packaging suppliers, and transporters. Also, have a list of your Allergen Management and Recall Teams. None of your company information will be shared.

Theme: Environmental detection and monitoring

This course is designed to help food and beverage manufacturers strengthen food safety programs and reduce contamination risks. The course introduces critical insights on validating risk-based controls, conducting root cause analysis, and leveraging data for continuous improvement, providing food safety professionals with science-backed strategies to enhance their environmental monitoring programs.

A structured series covering foundational importance, test types (ATP, pathogens), sampling techniques, regulatory use, and continuous improvement. While the focus of food testing has traditionally been on the finished product, a preventive approach through sampling and testing the food processing environment can help identify and address potential issues before they lead to a major problem or recall.
